Quick rice
Kraft 5 min rice 1/2 cup
1/3 cup of cranberries
1/2 tsp of garlic powder (garlic reduces cholesterol)
1/2 tsp of organic veggie stock powder
1/2 cup of water
6 larger shrimp
2:30 minutes in microwave and voila fast and hearty meal.
Mozzarella, Tomato and Basil Plate
This is one of my favorite! But the place I go shopping at for groceries stopped selling mozzarella that's not soaked in water or oil. I liked buying the big balls of mozzarella to slice up. Time for me to find a new grocery store, eh? Anyway, enjoy!
1 pound fresh mozzarella cheese, cut into 1/4" thick slices
3 to 4 medium fresh tomatoes, cut into 1/4" thick slices
1 bunch of fresh basil leaves
Extra-virgin olive oil
Salt and pepper
2 tablespoons capers rinsed and drained

Juice anyone?
I’ve been juicing a lot lately. Here’s my current favorite:
5-6 Carrots
1 Apple
½ Lemon
1 inch ginger root
3 cloves garlic
1 orange
1 stalk rhubarb (fresh from the garden ;)
That all goes in the champion juicer and then into me. MMMMMMMM
I’ll be switching to more greens in the morning juice as the start coming out of the ground a bit more. (Chard, Spinach, Kale)
